LIFE Energy Balls

Your new favorite energy ball recipe

Ingredients:

1 cup macadamia nuts

1/2 cup dried apricots (sulfur free)

1/2 cup dessicated coconut (plus extra for dusting)

1 Tbls coconut oil (most of the year straight from the jar, but in winter - melt on very low heat - we don't want heat in the mix)

1 Tbls L.I.F.E. (Lyophilised Indigenous Food Essentials)

Directions:

In a food processor blend the dried apricots on medium speed (TM 6 or equivalent) for 6 seconds. Open the lid and scrape off the sides. Ass the balance of the ingredients. Blend on medium speed for 10 seconds or until incorporated.

Tip the mixture out of the blender and into a bowl. Roll the mixture into walnut balls sized or to your liking. Roll in dedicated coconut. Place in fridge to firm up. Pretty, delicious and nutritious - full of phytonutrients. Enjoy!
