Gut Food Zucchini Cake

Ingredients

  • 2 cups grated zucchini
  • 3 egg yolks only
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups oat flour (you can make this by putting rolled oats in your food processor)
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup chopped nuts and seeds (try a combo or almonds and pumpkin seeds)
  • 1/3 cup Nourished Blends Gut Food

 

Method

  • Preheat oven to 180°C and line a standard loaf tin with paper.
  • Grate the zucchini into a large bowl, then use 2 paper towels to squeeze out most of the liquid.
  • Whisk the zucchini with the eggs, melted coconut oil, maple syrup and vanilla extract until well combined.

  • Stir in the flour, Gut Food and spices until a smooth batter forms, then fold nuts and seeds.
  • Pour batter into the tin.
  • Bake for 30-40 minutes, or until a toothpick comes out clean.
  • Allow to cool completely.
  • Store leftovers in an airtight container on the counter for up to 4 days or in the freezer. Enjoy!
