Gut Food Zucchini Cake
Ingredients
- 2 cups grated zucchini
- 3 egg yolks only
- 1/3 cup coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 2 cups oat flour (you can make this by putting rolled oats in your food processor)
- 2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup chopped nuts and seeds (try a combo or almonds and pumpkin seeds)
- 1/3 cup Nourished Blends Gut Food
Method
- Preheat oven to 180°C and line a standard loaf tin with paper.
- Grate the zucchini into a large bowl, then use 2 paper towels to squeeze out most of the liquid.
- Whisk the zucchini with the eggs, melted coconut oil, maple syrup and vanilla extract until well combined.

- Stir in the flour, Gut Food and spices until a smooth batter forms, then fold nuts and seeds.
- Pour batter into the tin.
- Bake for 30-40 minutes, or until a toothpick comes out clean.
- Allow to cool completely.
- Store leftovers in an airtight container on the counter for up to 4 days or in the freezer. Enjoy!
