Dandelion Salad
Dandelion salad - heaven. I only had to walk 4 steps from my back door to forage for these dandelion leaves.
“Dandelion” is derived from the French “dent de lion” - lion’s tooth.
Dandelion is an edible weed with an abundance of medicinal properties. It is a liver tonic and cleanser, improves the metabolism, balances digestion and is also tonic for kidneys, spleen and bladder. It contains high levels of potassium salts. And of course it is a great source of PHYTONUTRIENTS. The whole plant - leaves, roots and flowers are edible. The leaves are bitter and perfect in a salad. It is easily confused with other “false dandelions” like sow thistle which is also edible but has different properties.
I have simply mixed with celery, snow peas, fennel, pumpkin seeds and a home-made forage pesto.
You could even sprinkle Karuah Active Magnesium on top. Delicious.
